Carnivore Cheesecake


Cheesecake is one of my most favorite things to enjoy after a delicious and wholesome meal. When I went Carnivore, desserts obviously became slim to none as an after-dinner option. Thankfully, you can still make a killer cheesecake that is both naturally sweet from lactose and creamy while still fitting the carnivore diet parameters. I have a lot of low-carb cheesecake recipes in my back pocket, but this one had a nice tang from the sour cream and a natural sweetness from the dairy.
If you want to go dirty carnivore on this recipe, then you can add in a few key ingredients to make the recipe both infused with cannabis and a little sweeter on the palate. The choice is yours, but ultimately, having a dirty carnivore treat once in a while won’t derail your progress as these desserts are more savory then overly sweet like their full sugar counterparts. Dirty carnivore is also a great option for people who are transitioning off a standard American diet and need a cleaner version of their comfort foods that will help them stick to their new carnivore lifestyle.

What You Will Need to Make a Carnivore Cheesecake:
- Cream Cheese
- Sour Cream
- Eggs
- Bovine Gelatin
Optional Carnivore Cheesecake Ingredients (these make it dirty carnivore):
- Powdered Monk Fruit
- Vanilla Extract
- Lemon Extract
Equipment:
- Large Mixing Bowl
- Electric Hand Mixer
- 10″ Spring Form Pan or Smaller for a Higher Cheesecake
- Spatula
- Tinfoil
- Pan for Water Bath (see photo at bottom of recipe)

Ingredients
2 Cups Cream Cheese
3/4 Sour Cream
3 Eggs
1 Packet Kroger Unflavored Beef Gelatin
- Optional Dirty Carnivore Ingredients (you DO NOT have to add)
2/3 Cup Monk Fruit
1 Teaspoon Vanilla Extract
1 Teaspoon Lemon Extract
Directions
- In a large bowl, add the cream cheese, sour cream, and eggs. Add optional ingredients to the bowl now, if desired.
- Mix on medium speed with a handheld mixer until creamy and smooth.
- Sprinkle the gelatin over the mixture and gently mix in.
- Let the cheesecake batter set while the oven preheats to 320 degrees.
- Take the spring form pan and wrap the bottom with tinfoil so that water does not enter the cheesecake mixture (see photo on bottom of recipe post).
- Take your pan for the water bath and fill with 1 1/2 inches of water.
- When the oven is preheated, add the cheesecake batter to the spring form pan and then insert the pan into the water bath.
- Bake for 1 hour and 30 minutes.
- When the time is up, turn the oven off and open the oven door and let the cheesecake slowly cool for 15 minutes to prevent cracking.
- Remove from the oven and cool completely on a countertop. Put the cheesecake into the fridge and let it set overnight or at minimum 4 hours uncovered.

FAQs
Do I have to let the cheesecake set?
Yes! All cheesecakes, even full sugar ones, need to set at least 4 hours. But overnight is ideal.
How to store Carnivore Cheesecake?
It is recommended to store the cheesecake in a covered glass container in the refrigerator once it has set.
How Long Does It Last?
The carnivore cheesecake will last for 1 week in the fridge for maximum freshness! You can also freeze for up to a month in the freezer. Anything after a month, and the texture of the cheesecake will change.
