Carnivore bagels anyone? Yes, please! When I went carnivore, making these cheesy animal-based bagels is what helped me transition off all those high carb traditional wheat bagels. The moment I realized I could make a substitution that was both low-carb and you could toast them in the oven was a game changer for me! Put a smear of cream cheese on them, and I was sold! The perfect breakfast treat full of protein and healthy fats to get your metabolism and body revving.
Most low-carb bagels are full of plant-based alternative flours like coconut, psyllium husk, almond, or even gluten-free mixtures of various over processed ingredients. I decided to forgo any of this crap and create a denser consistency using ricotta cheese and bloomed beef gelatin in the eggs. It came out perfect, as I can toast them in the oven and smear some cream cheese on them. The texture also is fantastic pulled from the fridge and eaten cold on the go. Level these bagels up with some kief to heal the endocannabinoid system and you will be rocking and rolling.
What You Will Need to Make a Carnivore Bagels:
- Shredded Cheddar Cheese
- Shredded White Cheese (your choice)
- Parmesan Cheese
- Pastured Eggs
- Ricotta Cheese
- Bovine Gelatin
Optional Carnivore Bagel Ingredients (these make it dirty carnivore):
- .25 grams of Cheddar Cheese Kief
Equipment:
- Medium Mixing Bowl

Substitutions:
- You can substitute any shredded semi-soft cheese for the cheddar or white cheese. However, you need to substitute another hard cheese for the parmesan otherwise the bagel will not set properly. You can also substitute cottage cheese for the ricotta cheese.
- Any strain substitute for Cheddar Cheese. When preparing this recipe, I would recommend pairing strains that possess cheese like terpenes and flavonoids. The following cultivars would be ideal: Cheddar Head, Rainbow Cheddar, or Cheese. If you do not have access to these strains, then use your nose and taste buds to find other cultivar’s that have similar smell and flavor profiles.

Ingredients
1/2 Cup Shredded Cheddar Cheese
1 Cup Shredded White Cheese (your choice)
1/2 Cup Parmesan Cheese Flakes (heaping)
4 Eggs
1 Package Beef Gelatin (0.25 oz)
1/4 Cup Ricotta Cheese
- Optional Dirty Carnivore Ingredients (you DO NOT have to add)
.25 Grams Cheddar Cheese Kief
Directions
- Preheat the oven to 375 degrees. Grease the doughnut wells with butter.
- In a mixing bowl, combine the cheeses, ricotta, and optional kief if desired.
- In a glass cup, crack the eggs and whisk with a fork. Add the gelatin and whisk again. Let bloom for 5 minutes.
- Add the egg mixture to the bowl and stir until coated. Make sure all the cheese pieces are small.
- Pour into the doughnut wells. If you overfill them, you will need to stamp out the middle of the bagel with a circle cutter.
- Bake for 25-30 minutes or until golden brown on the tops and sides of the bagels. Let cool in pan completely.
Notes
- Cannabis is technically not Carnivore; however, I see plants as medicine as long as they are extracted correctly and used only when needed.

How to store Carnivore Cheesecake?
It is recommended to store the bagels in a covered glass container in the refrigerator once they have set.
How Long Does It Last?
Carnivore Bagels will last for 1 week in the fridge for maximum freshness! You can also freeze for up to a month in the freezer. Anything after a month, and the texture of the bagels will change slightly.
How Long Do I Toast Them For?
I put them in my fancy toaster oven from Costco on the “Toast” function for 4 minutes. Toaster ovens vary, so keep an eye on them initially. But 3-4 minutes should do it!
Can I Substitute the Eggs?
I have not tried to substitute the eggs in this recipe, and I do not know if any egg replacers such as yogurt will come out just as good as this recipe. If you are feeling adventurous and cannot tolerate eggs, ENR-G Egg Replacer could work in this recipe.
Can I Substitute the Shredded Cheese for Another Cheese?
