Dirty Carnivore Fondue

In 2011, I created a delicious PBR and bubble hash infused fondue that was a tremendous hit with people. Naturally, I wanted to take my original recipe and tweak it a bit to fit into my new carnivore lifestyle. I took out the PBR and swapped it out with 24hr chicken bone broth for a healthier option. But left the fairy dust in case anyone needed a boost in their endocannabinoid system. What came out was simply divine!

Yes, it is dirty carnivore. Which means this is either a little treat or will help you transition from the current diet you are on to carnivore. I personally find, a little dirty carnivore here and there keeps me on track. I picked the cultivar Fondue, but when preparing this recipe, I would recommend pairing strains that possess cheesy, spicy, earthy, and fermented terpenes and flavonoids. The following cultivars would be ideal in case you cannot find Fondue: Cheese, Sweet Cheese, or any of the Cheese crossbreeds. If you do not have access to these strains, then use your nose and taste buds to find other cultivar’s that have similar smell and flavor profiles.

The best thing about this recipe is that it gives you a comfortable, long-lasting buzz that you may eat as much of as you like. This fondue is ideal enjoyed in the evening when you can spend time with friends toasting to a fun-filled day or having a dinner party. Be sure to serve alongside a platter of meats for the perfect carnivore treat!

What You Will Need to Make Dirty Carnivore Fondue:

  • Gruyere Cheese
  • Swiss Cheese
  • Chicken Bone Broth
  • Xanthan Gum (dairy derived)
  • Lemon Juice (not optional)
  • Bubble Hash (optional)
  • Cracked Pepper (optional)

Equipment:

  • Fondue Pot or Electric Fondue Pot
  • Wooden Spoon
  • Measuring Cups
  • Measuring Spoons
  • Cheese Grater
  • Mixing Bowl

Substitutions:

Any strain substitute for Fondue. When preparing this recipe, I would recommend pairing strains that possess cheesy, spicy, earthy, and fermented terpenes and flavonoids. The following cultivars would be ideal: Cheese, Sweet Cheese, or any of the Cheese crossbreeds. If you do not have access to these strains, then use your nose and taste buds to find other cultivar’s that have similar smell and flavor profiles.

Dirty Carnivore Fondue

A dirty carnivore friendly fondue that is cheesy, gooey, and full of healthy fats!

Ingredients

  • 8 ounces Gruyere cheese

  • 8 ounces Swiss cheese

  • 1 and 1/4 Cup Chicken Bone Broth

  • 2 Tablespoons Dairy Derived Xanthan Gum

  • 1 Tablespoon Lemon Juice

  • Optional Ingredients
  • 3.5 Grams Decarboxylated Bubble Hash (optional)

  • Cracked Pepper to Taste

Directions

  • Using a cheese grater, shred the cheese and add to a mixing bowl. Sprinkle the xanthan gum and decarbed bubble hash over the cheese shreds and toss to coat.
  • In a fondu pot, add the chicken bone broth, and lemon juice. Bring this mixture to a simmer and the slowly add in the cheese stirring constantly in a figure-8 motion.
  • Once the cheese has melted, move the fondu pot to a table stand with a flame below.
  • Serve with carnivore bread, assortment of hard salami, sausages, bacon, beef tenderloin, sirloin steak, grilled chicken breast, pork tenderloin, elk, venison, or bison steaks. Sprinkle with a dash of pepper if desired.

Notes

  • Cannabis is technically not Carnivore; however, I see plants as medicine as long as they are extracted correctly and used only when needed.
  • To decarboxylize your cannabis bubble hash of choice, preheat your oven to 220° F. Spread the bubble hash out evenly onto a baking sheet. Place into the oven and bake for 25 minutes.

Can I make these without weed?
Of course! These recipes taste amazing both infused and not!

Why Cannabis?
When our body is homeostasis, it has no need for cannabis as it is happy. But if negative environmental, lifestyle, genetics, stress, diet and nutrition, alcohol consumption, or health factors are present, the system can become unbalanced, and we now have an endocannabinoid deficiency. This results in things like migraines, fibromyalgia, mood disorders, behavior problems, anxiety, depression, bowl issues, and metabolic issues like not being able to lose weight.

Using cannabis as medicine can restore this balance in the body when combined with a proper carnivore diet. With the goal being, to eventually transition off the cannabis. Think of cannabis as a little dirty carnivore helper, that is going to be the last plant you see before you are 100% successful and in homeostasis. And also think of it as a tool to put in your back pocket in case the unfortunate event of disease in the future causes your body to fall out of homeostasis again. Life happens. Just remember, cannabis is medicine so use it wisely.

What is the best cheese to use?
Grass-fed cheese is best! However, any cheese will do.

Do I have to use the lemon juice and xanthan gum?
Yes. If you omit one of these or both of them, the cheese mixture will break and curdle in the fondue pot. These two ingredients prevent the mixture from separating by emulsifying the melted cheese with the stock. A little dirty carnivore now and then will not ruin your results!

What is xanthan gum derived from?
It can come from dairy, corn, soy, or wheat. The process basically takes a sugar like lactose and uses a bacterium to ferment it to create a coating that acts as a thickener and emulsifier in foods. Xanthan gums labeled as vegan are going to be plant-based whereas brands that are not labeled vegan or dairy free usually will be derived from lactose.

How Long Does It Last?
If you have any leftovers, which I doubt you will if you have guests over, you can pour it into a glass container. When it cools, then you can add to a fridge. This will last 4 days in the fridge.

How Do I Reheat Fondue?
Reheated fondue can be done in a fondue pot or double boiler. Just add to a pot on the lowest setting until it melts back down again, stirring constantly like you did before.
