Animal-Based Maple Leaf Salmon Patties

Salmon is one of the healthiest fish a person can consume. Rich in omega 3’s, lean protein and calcium, this fish should be a staple to everyone’s diet. Unfortunately, most people shy away from fish either from badly prepared meals in the past or the thought of merely eating fish grosses them out. This is a great introductory yet elegant dish that will develop your palate to the point you may even try fresh caught fish and truly enjoy it. The Indica dominant strain Maple Leaf is the perfect accompaniment to this dish with sweet tones of maple syrup and earth that add a savory sweetness to the patties.

Living the Pacific Northwest is one of those treats when it comes to Salmon season and all the delicious types of salmon that run through the sound and rivers. Washington state is home to the following Pacific Ocean salmon: Chinook (King), Chum, Coho, Pink, and Sockeye. We have several salmon seasons throughout the year, which means you will never be short of this wonderful fish. And if you ever are blessed enough to experience the salmon run that begins in August and ends in November, it is truly a sight to behold!

Not only is the salmon dank in Washington state but also the weed! Classic strains come in and out of the state and when a favorite passes through, I am sure to snag it! Maple Leaf is a strain I fell in love within Colorado and when I found it here, I almost cried. So many happy memories going to Boulder to pick up the strain and getting sushi with salmon in it afterwards always flood my mind. So naturally, when I first made this recipe in 2010, I had to combine the two!

Maple Leaf packs a punch so it is advised to start low and go slow! It is a great strain for trouble sleeping, nausea, and mild pain. These effects are desired especially if you make this meal for dinner, as by the time the effects take place, you will be winding down for bed. Enjoy these salmon patties with a side of fresh fruit like mango or papaya or even a small microgreen salad. Enjoy!

What You Will Need to Make Animal-Based Maple Leaf Salmon Patties:

  • 1 can Wild Pacific Red Sockeye Salmon Fancy Grade with bones and skin or cooked 14oz or 14oz cooked salmon filet.
  • 1 ½ cup plain pork rinds ground
  • 2 large eggs
  • 1 tablespoon Maple Leaf Brown Butter Ghee mixed with 2 tablespoons raw honey. And 1 tablespoon ghee to sear with.
  • Pink Himalayan Sea Salt to taste

Fish is best when wild caught as it is healthier for us as humans to eat. When we farm fish, they can be exposed to antibiotics, dyes, chemicals, pesticides, and disease. Fish that are in the wild have less exposure to these toxic elements which means less toxins in the meat and fat.

Once fully cooked, they patties can be stored in the fridge for up to 4 days in a sealed container.

These patties will last 4 days that are stored in the fridge. Anything past that and we recommend freezing portions.

These patties can be frozen much like salmon burgers you find in the freezer section of the store. Place each patty between parchment paper and stack in a freezer safe zip lock bag or glass container.

How to Defrost Animal-Based Maple Leaf Salmon Patties
Pull from the freezer and place into the refrigerator to defrost overnight. Or you can also defrost on the counter for 15 minutes before warming up in a toaster oven set at 300 degrees for 15-20 minutes.

  • 1 1/2 cup plain pork rinds ground
  • 2 large eggs
  • 1 tablespoon Maple Leaf Brown Butter Ghee mixed with 2 tablespoons raw honey. And 1 tablespoon ghee to sear with.

  1. In a medium sized bowl, mash the Salmon and eggs with a fork. This type of salmon comes with bones, they have already been cooked soft and are edible. It is actually very healthy to eat these as they are high in calcium, so do not be afraid!
  2. Add the pork rinds, infused ghee and raw honey, a few pinches of sea salt. Combine until you get a sticky dough like mixture. If you feel the mixture is a bit too dry add a few tablespoons of filtered water to loosen the mixture.
  3. Put a cast iron skillet on the stove with a medium setting. Add 1 tablespoon ghee to your pan. Feel free to add a little more if you have a larger pan. Form the salmon mixture into four large patties. You can also divide this mixture into 8 smaller patties if you feel want smaller portions. Adjust the cannabis ratio to your preference.
  4. When the pan it hot, place the patties in the ghee and cook each side for approximately 5-6 minutes. Serve with a fruit salad, dipping sauce, or side of your choice. Enjoy!

Strain Substitutions

I would recommend any strains whose terpenes reflect the sweet maple and earthy flavor profiles of Maple Leaf. Picking the most pleasing strain that you can find for this dish that have similar smell and taste profiles would be the ideal strains to choose from. Be creative, follow your nose/taste buds and have fun with it!

Dosage

If the strain you choose has a THC content tests around ten percent, then 15 percent of 1,000 mg would be 150 mg per gram. Substitute the number of your THC percentage and do the math to figure out your desired dosage per tablespoon for your cannabis butter. Adjust the dosage accordingly to your personal preferences.
