I must admit when I started the transition to the carnivore diet, American cheese was one of those vices that just sat there in the fridge staring at me while I was looking at it. I mean, how can you not love the accessibility, ease, and melt of fake cheese? It is just one of those nostalgic cheese products like Velveeta and Cheese Whiz that you cannot say no to. Yeah, it isn’t good for you. We all know this! But there is just something about that smooth melt and cheese pull! Anyways, at one point I decided I did not want any more of that fake sh*t and that I needed to make a green, green version of it. You get what I am throwing down?
Obviously, those out there who are strain connoisseurs, most likely right off the bat, will have a correct guess at the cultivar I decided to pair with this recipe. Yup, you got it, “Cheese”. This delicious Indica flower hails from the UK and packs a potent punch. Not recommended for first time consumers, this bud helps reduce inflammation, pain, and anxiety for seasoned veterans. For those not used to the potency, the head spins might occur in the initial onset but will quickly disappear. It is advised to keep kefir or electrolyte water to quell these effects until it passes. But generally speaking, if you can handle yourself on edibles or a joint glistening in kief, you will be fine.
What You Will Need to Make Carnivore American Cheese:
- Raw Colby Cheese
- Raw Mild Cheddar Cheese
- Whole Raw Milk
- Bovine Gelatin
- Butter
- Salt
Equipment:
- Small Bread Pan or Silicon Bread Pan
- Small Saucepan
- Small Bowl
- Vitamix
- Measuring Spoons
- Measuring Cups
- Whisk
- Parchment Paper (if using a non-silicon bread pan)
- Spatula
Substitutions:
- Any kief strain substitute for Cheese. When preparing this recipe, I would recommend pairing strains that possess cheesy, spicy, earthy, and fermented terpenes and flavonoids. The following cultivars would be ideal: Fondue, Sweet Cheese, or any of the Cheese crossbreeds. If you do not have access to these strains, then use your nose and taste buds to find other cultivar’s that have similar smell and flavor profiles.

Ingredients
8 Ounces Raw Colby Cheese
8 Ounces Mild Cheddar Cheese
1 1/2 Cups Raw Milk
1 Packet Gelatin (1/4 oz packets Kroger Unflavored Gelatin)
2 Tablespoons Raw Butter
1.5 Teaspoons Pink Himalayan Sea Salt
- Optional Ingredients
3.5 Grams of Cheese Kief
Directions
- In a small bowl, combine 1/2 cup milk with the gelatin. Whisk and let set.
- In a Vitamix, cut up the cheese into slices. Blend until crumbly.
- Heat 1 cup milk, 2 tbs butter, and kief in a small saucepan on the stove. Bring to a boil and then take off the heat. Whisk in the gelatin mixture vigorously for 1 minute.
- Add the hot mixture into the Vitamix, then blend on high. You will need to scrape down the sides with your spatula. Season with salt and blend again.
- Immediately pour into a bread pan lined with parchment paper or a silicon bread pan. Use the spatula to smooth the carnivore American cheese evenly.
- Place the pan into the fridge and let set overnight. In the morning, slice as needed or pre-slice with parchment paper between to store.
Notes

- Cannabis is technically not Carnivore; however, I see plants as medicine as long as they are extracted correctly and used only when needed.
- To decarboxylize your cannabis bubble hash of choice, preheat your oven to 220° F. Spread the bubble hash out evenly onto a baking sheet. Place into the oven and bake for 25 minutes.

It is recommended to store the cheese in a block in a large container and slice as you need it. Or if you are willing, you can pre-slice it and put it between parchment paper in a large gallon zip lock bag.
