Baking Tips Using Over Ripe Bananas?

Over ripe bananas in the kitchen? We have all been there. Sometimes throwing them out in the compost or garbage seems like a good idea. However, an overripe banana is packed with powerful nutrients and flavor. The more ripe and developed the sugars are, the stronger the banana flavor is. Which is absolutely perfect for baking!

Did you also know you can also substitute bananas for oil or eggs in traditional and vegan recipes? This is my secret weapon for ultra moist, fluffy, and low fat baked foods. A perfect high carb vegan swap to make desserts healthier. And you can combine applesauce and bananas for both the oil and eggs respectively. Pretty cool huh? Just remember:

  • 1 banana = 1 egg
  • Applesauce as a substitute for oil, it is a 1:1 ratio.
  • Banana as a butter substitute, it is 1:1 as well.
